These recipes have been developed by Rita Bingham. They are feature in her cookbook "Country Beans". This book features nearly 400 fast bean recipes for every meal of the day, including snacks and desserts, using whole beans, mashed beans, and bean flour.

Bean Dip or Burrito Filling
Whisk 3/4 cup Bob's Red Mill Black Bean Flour mixed with 1/4 tsp. cumin, 1/2 tsp chili powder and 1/2 to 3/4 tsp salt into 2 1/2 cups hot water. Stir 1 minute while cooking over medium high heat. Reduce heat to medium low, cover and cook 4 minutes. Add 1/2 cup of your favorite salsa or Picante Sauce. Mixture thickens as it cools. Let cool 15 minutes if serving as a dip. Makes 3 cups.
Microwave: Using a 6 cup microwave bowl, stir flour and seasonings into hot water. Cover and cook 1 minute on high or until mixture boils. Stir well. Cook 3 more minutes. Add salsa and cool.
