Made from pitted, dried and chopped dates, these chewy little nuggets are delightfully rich and sweet. Quinoa Oat Date Porridge
This recipe was submitted by Lisa and Krista Shepard from McMinneville, Oregon
- 1/4 cup Organic Quinoa Grain
- 1/4 cup Steel Cut Oats
- 1-1/2 cups Non-dairy Milk Beverage of choice (soy, hemp, coconut, rice)*
- 1/4 cup Date Crumbles
- 1/2 tsp Cinnamon
- 2 Tbsp Flaxseed Meal
Bring non-dairy milk to a boil in a large saucepan. Add quinoa and oats, cover, and simmer 20 minutes. Turn off heat, then stir in dates, cinnamon, and flaxseed meal. Portion into 2 bowls for a hearty breakfast! Serves two.
*Because the grains need to boil, non-dairy milk works best in this recipe. You can, alternately, use half cow's milk and water or just water.
