Cornmeal Date Muffins
1/2 cup Bob's Red Mill Date Pieces
1/2 cup Whole Wheat Flour
1 1/2 cups Cornmeal, Fine Grind
1/2 tsp Salt
1 Tbsp Baking Powder
1/4 cup Vegetable Oil
1/2 cup Milk
3 Tbsp Honey
2 large Eggs
Preheat oven to 400°F. Place twelve foil muffin liners into a muffin pan, set aside. Combine the chopped dates with whole wheat flour and out into a large mixing bowl. Add the cornmeal, salt, baking powder and stir until uniform. In another bowl, combine the oil, milk and honey and eggs. Stir with a fork until smooth. Pour the wet ingredients over the dry ingredients and stir gently until all is moist. Divide the batter among the foil liners and bake for about 15 minutes, or until an inserted toothpick comes out clean. Makes about 12 muffins.
